Based on his childhood memories of the feelings and flavors of Hawaii, Roy invented what he refers to as "Hawaiian Fusion" cuisine— a tempting combination of exotic flavors and spices mixed with the freshest of local ingredients, always with an emphasis on seafood.
Born in Tokyo, Yamaguchi vividly recalls visits with his grandparents to Maui, where he had his first tastes of fish, crab, octopus and lobster bought fresh at Oceanside piers.
Thusly inspired, he graduated the Culinary Institute of America in New York at the age of 19, where, after several years of intense training, he became a "Master Chef."
When the first Roy's opened in 1988 in the south Honolulu district of Hawaii Kai, many thought a high-end restaurant couldn't survive so far from Waikiki. They were wrong. Owner and chef Roy Yamaguchi has once again bucked convention by converting the Niblick restaurant at West Oahu's Ko Olina Golf Club into Roy's Ko Olina.
The space has undergone a brilliant transformation, giving it that Roy's feel, including his signature display kitchen. Executive Chef Michael Leslie is overseeing operations.
Roy's Ko Olina is the 33rd addition to the successful line of Roy's restaurants in major cities and resorts around the world. All are well known for Chef Yamaguchi's Hawaiian Fusion Cuisine, blending fresh local ingredients with European sauces and bold Asian spices.

Located in Honolulu’s busy industrial district of Iwilei, Sam Choy’s family style, casual restaurant opened in May 1997 featuring huge portions of local favorites for breakfast and lunch. Dinner at Sam Choy’s Breakfast, Lunch, & Crab showcases a variety of fresh crab, lobster and shellfish, steaks, ribs, and chicken.
Sam Choy’s “Big Aloha” Beer is brewed fresh on the premises by Brewmaster David Campbell. Monthly Brewer’s dinners are held in the private dining room to educate patrons on food and beer pairing. Group tours of the microbrewery are also available.
